Cooking With the Freshest

I have to share one of my favorite easy sauces to make. It turns green vegetables into something delicious and amazing, not to mention it's incredibly easy to do.

What you'll need:

  • Oilve oil or sesame oil
  • Ginger and/or garlic
  • Soy sauce
  • Sesame seeds
  • Brown rice vinegar
  • Lemon (optional)

Break out that skillet. I use cast iron, but that's just a personal preference. Coat the bottom in olive oil (I also recommend sesame oil if you have any handy). Saute the crushed ginger and or garlic I use both because it's so tasty. But you can do one or the other if you prefer. If you're going to use sesame seeds throw them in now. Saute this deliciousness for about 5 minutes, at the very end splash a little soy sauce in the pan stir it all up. Toss your steamed veggies in it. Sometimes I use a little vinegar or lemon to make it pop. This works great on anything from kale to asparagus it just transforms the taste.

Also don't worry if you burn the sesame seeds it tastes like a toasted everything bagel if that happens.

You mentioned a few oils and I've made enough mistakes cooking with oils to come up with a few guidelines for a couple oils and their uses:

olive oil - good for sauteing over low to medium heat

peanut oil / vegetable / soy bean oil - good for higher heat searing

sesame - I usually combine to a stir fry towards the end because it has a nice flavor to it.
